Three Wise Monkeys Colchester is searching for a Head Chef / Kitchen Manager who lives and breathes great food, great beer, and great standards. Our venue is known for its craft beer offering, smokehouse-inspired dishes, and a buzzing multi-floor atmosphere. We need a leader who can deliver consistency, champion compliance, and grow a strong, confident kitchen team.
What You’ll Do
  • Lead the kitchen with confidence, clarity, and a commitment to high standards
  • Oversee the production of our smokehouse-style menu, ensuring flavour, consistency, and quality every time
  • Work closely with the wider team to create dishes that pair brilliantly with our craft beer selection
  • Maintain rigorous compliance across food safety, allergen management, HACCP, audit procedures, and daily documentation
  • Drive kitchen organisation: stock control, ordering, prep systems, and GP management
  • Develop and mentor team members through structured training, coaching, and clear progression pathways
  • Build a positive, supportive kitchen culture where people feel valued and motivated
What We’re Looking For
  • Proven experience as a Head Chef or Kitchen Manager in a high-volume, quality-led kitchen
  • Strong understanding of smokehouse-style cooking, low-and-slow methods, and bold flavour profiles
  • A leader who takes compliance seriously and can embed strong systems and habits
  • Someone who enjoys developing people and building a team that works with positivity, pride and purpose
  • Excellent organisational skills and the ability to stay calm and focused under pressure
  • Knowledge of cost control, stock management, and achieving strong GP
  • A passion for craft beer and how food can complement the drinking experience

Job Description:
Due to the recent expansion of our outdoor seating area, we are looking for an experienced and talented Sous Chef to join our kitchen team.
The right candidate will work closely with the Kitchen team to maintain and build upon the excellent reputation our venue has.
Our restaurant is known for its authentic smokehouse experience. Food is served throughout the day with a focus on slow-cooked, smoked American barbeque-style food and gourmet burgers using local produce at the heart of everything we do. We have an excellent reputation for hosting Taster Evenings every month on our restaurant floor, as well as private functions and corporate team days.
Key responsibilities include:
  • Working closely with the Head chef to be able to run the kitchen in his/her absence
  • Experience in menu development & costings
  • Plan and take part in monthly taster nights
  • Adhering to food safety and health and safety standards
  • GP, wastage control & H&S monitoring
  • Producing new dishes and menu ideas
  • Maintaining a good working relationship with FOH team and developing junior members in the kitchen
Qualities and experience that you will have:
  • Minimum 2 years Sous Chef experience
  • Level 2 Food Safety Certificate
  • Leadership skills
  • Experience of working under pressure in a busy kitchen
  • Passion and enthusiasm for smoked foods
  • Ability to work well in a team

The successful candidate will be competent working with fresh meats and produce and have a passion for smoked food. Experience of working with smokers would be advantageous.

Known for our craft beer, in‑house brewery, and smoked food menu, we are passionate

about creating dishes that pair perfectly with the beers we produce. We are now seeking

talented and motivated chefs to join our growing kitchen team.

The Role

We are looking for chefs at various levels who are committed to delivering high‑quality food

in a fast‑paced environment. You will work closely with the Food Service Manager and

kitchen team to prepare, cook, and present dishes to a consistently high standard.

Key Responsibilities

• Prepare, cook, and present menu items to specification

• Maintain high standards of food quality, flavour, and presentation

• Support the delivery of our smoked food offering and beer‑led menu concepts

• Ensure all food is stored, prepared, and served safely in line with food hygiene

standards

• Assist with stock control, rotation, and wastage reduction

• Contribute to menu development and specials when required

• Maintain a clean, organised, and safe working environment

• Work collaboratively with the kitchen team and front of house team to ensure

smooth service

• Follow company policies, procedures, and kitchen systems

What We’re Looking For

• Previous experience in a professional kitchen (smoked food experience beneficial

but not essential)

• A positive, proactive work attitude and willingness to learn• Strong communication and teamwork skills

• Ability to work efficiently under pressure

• Good understanding of food safety and hygiene standards

• Passion for great food and an interest in craft beer
