- Lead the kitchen with confidence, clarity, and a commitment to high standards
- Oversee the production of our smokehouse-style menu, ensuring flavour, consistency, and quality every time
- Work closely with the wider team to create dishes that pair brilliantly with our craft beer selection
- Maintain rigorous compliance across food safety, allergen management, HACCP, audit procedures, and daily documentation
- Drive kitchen organisation: stock control, ordering, prep systems, and GP management
- Develop and mentor team members through structured training, coaching, and clear progression pathways
- Build a positive, supportive kitchen culture where people feel valued and motivated
- Proven experience as a Head Chef or Kitchen Manager in a high-volume, quality-led kitchen
- Strong understanding of smokehouse-style cooking, low-and-slow methods, and bold flavour profiles
- A leader who takes compliance seriously and can embed strong systems and habits
- Someone who enjoys developing people and building a team that works with positivity, pride and purpose
- Excellent organisational skills and the ability to stay calm and focused under pressure
- Knowledge of cost control, stock management, and achieving strong GP
- A passion for craft beer and how food can complement the drinking experience

- Working closely with the Head chef to be able to run the kitchen in his/her absence
- Experience in menu development & costings
- Plan and take part in monthly taster nights
- Adhering to food safety and health and safety standards
- GP, wastage control & H&S monitoring
- Producing new dishes and menu ideas
- Maintaining a good working relationship with FOH team and developing junior members in the kitchen
- Minimum 2 years Sous Chef experience
- Level 2 Food Safety Certificate
- Leadership skills
- Experience of working under pressure in a busy kitchen
- Passion and enthusiasm for smoked foods
- Ability to work well in a team

About Us
Three Wise Monkeys is a vibrant, multi‑level venue located in the heart of Colchester.
Known for our craft beer, in‑house brewery, and smoked food menu, we are passionate
about creating dishes that pair perfectly with the beers we produce. We are now seeking
talented and motivated chefs to join our growing kitchen team.
The Role
We are looking for chefs at various levels who are committed to delivering high‑quality food
in a fast‑paced environment. You will work closely with the Food Service Manager and
kitchen team to prepare, cook, and present dishes to a consistently high standard.
Key Responsibilities
• Prepare, cook, and present menu items to specification
• Maintain high standards of food quality, flavour, and presentation
• Support the delivery of our smoked food offering and beer‑led menu concepts
• Ensure all food is stored, prepared, and served safely in line with food hygiene
standards
• Assist with stock control, rotation, and wastage reduction
• Contribute to menu development and specials when required
• Maintain a clean, organised, and safe working environment
• Work collaboratively with the kitchen team and front of house team to ensure
smooth service
• Follow company policies, procedures, and kitchen systems
What We’re Looking For
• Previous experience in a professional kitchen (smoked food experience beneficial
but not essential)
• A positive, proactive work attitude and willingness to learn• Strong communication and teamwork skills
• Ability to work efficiently under pressure
• Good understanding of food safety and hygiene standards
• Passion for great food and an interest in craft beer
