Experienced Sous Chef
We are looking for an experienced and talented Sous Chef to join our kitchen team.
The right candidate will work closely with the Head Chef to maintain and build upon the excellent reputation our venue has.
Our restaurant is known for its authentic smokehouse experience. Food is served throughout the day with a focus on slow-cooked, smoked American barbeque-style food and gourmet burgers using local produce at the heart of everything we do. We have an excellent reputation for hosting Taster Evenings every month on our restaurant floor, as well as private functions and corporate team days, and our recently launched Bottomless BBQ dining experience.
Key responsibilities include:
- Working closely with the Head chef and able to run the kitchen in his/her absence
- Experience in menu development & costings
- Plan and take part in monthly taster nights
- GP, wastage control & H&S monitoring
- Producing new dishes and menu ideas
- Maintaining a good working relationship with FOH team and developing junior members in the kitchen
Qualities and experience that you will have:
- Minimum 2 years Sous Chef experience
- Level 2 Food Safety Certificate
- Leadership skills
- Experience of working under pressure in a busy kitchen
- Passion and enthusiasm for BBQ foods
- Ability to work well in a team

Food Service Manager
We are looking for an experienced Food Service Manager to join our management team at Three Wise Monkeys Colchester.
Our venue is known for its authentic smokehouse experience. Food is served throughout the day with a focus on slow-cooked, smoked American barbeque-style food and gourmet burgers using local produce at the heart of everything we do. We have an excellent reputation for hosting Taster Evenings every month on our restaurant floor, as well as private functions and corporate team days.
We are looking for a Food Service Manager with a positive personality who can build an instant rapport with our customers and lead the team to deliver exceptional standards.
The successful candidate will be responsible for:
- Assist the General Manager in achieving strong gross profit margins through valuable training and ongoing staff management.
- Ensure revenue growth by running an efficient food service and working closely with our full-time promotions team.
- Assist the General Manager in maintaining labour costs by creating effective schedules.
- Manage reservations and customers enquires
- Support and work with the management team for the purpose of improving the running of the food service and upkeep of the buildings.
- Knowledgeable on all allergens and current food handling and safety regulations.
- Recruiting, training and developing staff members
- Conduct performance reviews and one to ones with team members.
- Guarantee all aspects of health and safety, compliance and licensing are adhered to.
- Liaising with suppliers and contractors
- Be at the forefront of staff motivation and morale
- Daily accounting duties
Qualities and experience that you will have:
- Restaurant Management minimum 3 years’ experience
- Excellent communication skills
- A strong motivator and team leader
- The highest attention to detail
- Have excellent organisational skills with clear, distinct briefing and delegation skills

Assistant General Manager
An exciting opportunity to join our business as Assistant General Manager in our flagship venue located in the heart of the city of Colchester.
We are a growing independent business with venues in Colchester and Ipswich.
Our venues are known for their vibrant atmosphere, huge range of quality beers and a passionate focus on smoked barbecue meats and burgers. Our venues hosts a large range of events, functions and live music performances throughout. We also house a thriving basement bar and a restaurant floor.
We are looking for an Assistant General Manager with a strong industry background in food and beverage who can assist the General Manager in leading a team and who is passionate about delivering the very best standards and customer experience.
Main responsibilities include:
- Assist the General Manager in achieving strong gross profit margins through valuable training and ongoing staff management
- Ensure revenue growth by running a great venue, working closely with our promotions team and implementing exciting new events
- Assist the General Manager in maintaining labour costs by creating affective schedules
- Support and work with the management team for the purpose of improving the running of the venue and upkeep of the building
- Guarantee all aspects of Health and Safety, Licensing and Food Safety are adhered to
- Recruiting, training and developing staff members

The successful applicant will have minimum of three years’ experience in the same/similar management role. Have a profile to be the motivator and mentor to your team and have first-class communication skills.

Experienced Chef de Partie
We are currently seeking an experienced Chef de Partie to join our team in Three Wise Monkeys Colchester.
The right candidate will ideally have experience working in a fresh produce kitchen, work well under pressure, be very consistent and possess excellent communication skills.
At TWM we have a busy ground floor pub, first level restaurant as well as a basement gin bar. Our restaurant is known for its authentic smokehouse experience. Food is served throughout the day with a focus on slow-cooked, smoked American barbeque-style food and gourmet burgers using local produce at the heart of everything we do.
You must be able to work Friday and Saturday nights.
Key responsibilities:
- Preparing, cooking and presenting dishes.
- Helping the sous chef and head chef to develop new dishes and menus.
- Training junior staff members.
- Ensuring you and your team have high standards of food hygiene.
- Adhere to Health, Hygiene & Safety Act regulations.
- Monitoring portion and waste control to maintain profit margins.
- Liaising with suppliers.
- Checking deliveries for quality
Qualities and experience that you will have:
- Experience of working under pressure in a busy kitchen
- Level 2 Food Safety Certificates are advantageous but not essential
- passion and enthusiasm for BBQ foods
- Ability to work well in a team
