General Manager

We are looking for an exceptionally talented and experienced General Manager to join our team and take the lead of our award winning flagship city centre venue.

· Pasini is an independent business established 25 years ago, with four pubs and bars across East Anglia; Twisters, Three Wise Monkeys Colchester and Ipswich and Other Monkey Brewing.

· Passionate about great experience, craft food and drink, each venue aims to be a staple of the communities it serves whilst providing meaningful and rewarding employment for local people.

· Proud of its locality, Pasini works with local suppliers for wines, beers, meats, cheeses, and fresh fruit & veggies, with food and drink menus changed seasonally and freshly cooked on site.

About you:

· A natural born leader with a proven track record of success as a General Manager in the hospitality sector.

· Impeccably high standards and attention to detail in every aspect of the day to day running of a great venue.

· The capability to deliver consistent financial results and KPI’s for your venue.

· A ‘people person’ with great communication and leadership skills.

Your responsibilities include:

· Working with the support of our senior leadership team to maximise revenue opportunities and grow sales, manage budgets, and keep control of your P&L.

· Lead by example in all that you do and bring our brands (Three Wise Monkeys and Other Monkey Brewing) to life through your team in delivering industry leading experiences for our customers.

· Create a welcoming atmosphere and provide industry leading experiences for our guests.

· Ensure that all enquiries are dealt with in a timely and efficient manner and translate into bookings.

· Lead, inspire, motivate, support, coach, and develop your team, ensuring that the highest levels of professionalism and service standards are met.

· Demonstrate a passion for our brands and develop yours’ and your team’s product knowledge.

· Guarantee all aspects of Health and Safety, Compliance, Licensing and Food Safety are adhered to consistently.

· Liaising with suppliers, contractors, and other stakeholders.

Additional Information:

As part of the Management Team, you will be expected to work five out of seven days, the hours will be mainly evenings and weekends and it will be in a fast-paced environment.

Salary Information:

Salary range £36,000 to £40,000 per annum.

Plus quarterly KPI based bonus plan.

Chef de Partie

We are currently seeking an experienced Chef de Partie to join our team in Three Wise Monkeys Colchester.

The right candidate will ideally have experience working in a fresh produce kitchen, work well under pressure, be very consistent and possess excellent communication skills.

At TWM we have a busy ground floor pub, first level restaurant as well as a basement gin bar. Our restaurant is known for its authentic smokehouse experience. Food is served throughout the day with a focus on slow-cooked, smoked American barbeque-style food and gourmet burgers using local produce at the heart of everything we do.

You must be able to work Friday and Saturday nights.

Key responsibilities:

  • Preparing, cooking and presenting dishes.
  • Helping the sous chef and head chef to develop new dishes and menus.
  • Training junior staff members.
  • Ensuring you and your team have high standards of food hygiene.
  • Adhere to Health, Hygiene & Safety Act regulations.
  • Monitoring portion and waste control to maintain profit margins.
  • Liaising with suppliers.
  • Checking deliveries for quality

Qualities and experience that you will have:

  • Experience of working under pressure in a busy kitchen
  • Level 2 Food Safety Certificates are advantageous but not essential
  • passion and enthusiasm for BBQ foods
  • Ability to work well in a team
