An exciting opportunity to join our business as Head Chef in Colchester.

We are a growing independent business with venues in Ipswich and Colchester.

Our restaurant is known for its authentic smokehouse experience. Food is served throughout the day with a focus on slow-cooked, smoked American barbeque-style food and gourmet burgers using local produce at the heart of everything we do. We have an excellent reputation for hosting Taster Evenings every month on our restaurant floor, as well as private functions and corporate team days.

Main responsibilities include assisting the Executive Head Chef of Three Wise Monkeys on the following aspects:

  • Menu building/design
  • Maintain labour costs by creating effective schedules
  • Health and Hygiene Management
  • Stock control
  • Liaising with suppliers and contractors
  • Leading the kitchen during service
  • Recruiting, training, and developing staff members
  • Conduct performance reviews and one to one’s for team members
  • Liaising with management

 

Requirements

  • Proven experience as head chef, 3 years
  • Exceptional proven ability of kitchen management
  • Ability in dividing responsibilities and monitoring progress
  • Outstanding communication and leadership skills

Beverage Manager

Salary: £24,000.00-£26,000.00 per year

Job description

We are looking for an experienced Beverage Manager to join our management team at Three Wise Monkeys Colchester.

We are a growing independent business with venues in Ipswich and Colchester. Our venues are known for their vibrant atmosphere, huge range of quality beers and a passionate focus on smoked barbecue meats and burgers using local produce at the heart of everything we do. We have an excellent reputation for hosting Taster Evenings, as well as private functions and corporate team days. We also house a thriving basement gin bar and a restaurant floor.

The successful candidate will be responsible for:

  • Creating and maintaining a beverage program suited to the venue’s unique selling points, market trends and existing supplier agreements
  • Work closely with the promotions team to highlight exciting new products
  • Assist in creating effective staff schedules
  • Support a strong gross profit margin with disciplined stock control and ordering
  • Host taster evenings and work closely with the kitchen to develop food and beverage pairings
  • Develop and manage staff training that enhances the beverage program
  • Support the general manager with the purpose of improving the running of the venue and upkeep of the building
  • Follow all aspects of health and safety and licensing conditions
  • Undertake daily accounting duties that help ensure the security of all money in and money out of the venue
  • Deal with customer enquiries and bookings
  • Liaise with suppliers and contractors

 

Qualities and experience that you will have:

  • Beverage Management minimum 2 years’ experience

Assistant Manager

We are currently seeking an Assistant Manager to join our team at Three Wise Monkeys Colchester.

Our venue in Colchester is known for its vibrant atmosphere, huge range of quality beers and a passionate focus on smoked American-style barbecue and burgers. The venue in Colchester hosts a large range of DJ events and functions throughout. We also house a thriving basement gin bar and a restaurant floor.

We are looking for an Assistant Manager who is passionate with a love of the industry and can lead a team ensuring excellent customer service is delivered.

Main responsibilities include:

  • Assist the management team to ensure revenue growth by running a great venue, working closely with our promotions team
  • Assist the management team to maintain labour costs
  • Administrative duties including customers enquiries and bookings
  • Manage workplace conflicts
  • Guarantee all aspects of Health and Safety, Licensing is adhered to
  • Support and work with the management team for the purpose of improving the running of the venue and upkeep of the building
  • Training and developing staff members
  • Be at the forefront of staff motivation and morale

Private & Corporate Events Manager

Full-time, Permanent

Job description

Pasini Promotions is looking for a Private and Corporate Event Manager to drive forward and confidently procure, book and execute private and corporate functions across all venues under Pasini Leisure; Three Wise Monkeys Colchester, Three Wise Monkeys Ipswich, V Bar, Twisters Bar and the soon to be fully opened Other Monkey Brewing Microbrewery and Tap Rooms.

The candidate will be responsible for responding to inbound enquiries within a timely manner, providing in depth and bespoke 1:1 response to each enquiry, offering suggestions, solutions and ideas and ensuring a robust system is in place to follow up with and covert leads into bookings.

The candidate will be responsible for proactively engaging with local businesses and networking within the local community to procure and generate corporate and private events, ensuring that you are the go-to contact for brilliant and well-delivered functions in the local areas of Suffolk and Essex, utilising the USPs of each venue to elevate the experience.

The candidate will take pride in ensuring that each and every private event is run smoothly and exceeds the expectations of the customer and their guests. You are motivated by generating sales and brilliant at upselling and cross-selling and highlighting what you need to help you do this. You like to work months in advance, ensuring the required assets are ready to book corporate events for key dates long in advance, for example, booking Christmas in June.

You will collect and chase deposits and ensure for each event or function, an event plan and booking form is completed seven days in advance of event, including dietary requirements, food and drinks pre-ordered and any special additional requirements thoroughly detailed. You will brief the respective venue teams in advance, ensuring they are fully prepared and ensure that an onsite contact is established for each and every private event for the customer.

You will work closely with the Live Events Manager to ensure that all spaces for venues are booked and busy, ensuring no double bookings and working together to maximise all opportunities for events across the venues.

Key responsibilities:

  • Drive the execution of the private & corporate event strategy in line with Directors vision.
  • Increase opportunities for private & corporate events in partnership with the venue teams – devising packages that attract profitable business, proactively attracting, confirming and maintaining corporate relationships.
  • Attract and convert event, wedding, group, and private dining business.
  • Utilise the corporate & private event pack and ensure updated quarterly to high standard, signed off by Directors.
  • Utilise Asana for the entire process, from booking functions to logging new client contact details, leads and issuing and holding contracts.
  • Ensure thorough coordination, communication and organisation for each event with venue and internal PP teams to ensure no double bookings and terms and conditions and requirements of each event are identified and briefed and diaries are updated with all relevant information prior to event.
  • Ensure data is captured from each private and corporate booking including revenue generated to report on monthly.
  • Procure new leads on a monthly basis, locating HR/People Manager/Directors of local businesses.
  • Tenaciously chase up all leads and interest
  • Upsell and cross promote – utilising the full Leisure portfolio at your disposal.
  • Engage with and build relationships with corporate clients, council and group figures and wider local community
  • Host quarterly networking events for local businesses for each venue and regular monthly meetings held with local businesses/figureheads/company owners etc
  • Confidently communicate with corporate and event customers to provide assurance that their event is in safe hands
  • Drive promotion of Private and Corporate event concepts and offering via the PP team for each venue, ensuring this is a core element of the promotional strategy
  • Meet with the Directors monthly to present the private and corporate event bookings each month, with KPIs
  • Private events booked for each venue for the month ahead
  • Private events held for each venue that month & total spend
  • No. of new leads for the month for each venue generated
  • Meetings/engagements held and budget spent on procuring new opportunities for private bookings i.e holding coffee mornings, coffee meetings, lunch on the venue etc

Additional requirements

  • As with the nature of the hospitality industry in which the PP operates, there will be some requirement for weekend and evening work at key events or shoots for example as a key onsite support. Advance notice will be given wherever possible and for weekends worked, time in lieu will be given, signed off by the line manager
  • The role is a fundamental part of a small, busy and fast paced marketing department which may require over time during busy campaign moments and combined team efforts will be required to ensure the successful implementation of key campaign deliverables
  • As part of a small team, there might be instances where the person will need to support in the delivery and management of various different activities that support the smooth running of the team and the client work and delivery

 

Sous Chef

Salary:£22,000.00-£24,000.00 per year

We are looking for a talented Sous Chef to join our kitchen team here at Three Wise Monkeys, Colchester.

The right candidate will work closely with the Executive and Head Chef to maintain and build upon the excellent reputation our venue has!

Our restaurant is known for its authentic smokehouse experience. Food is served throughout the day with a focus on slow-cooked, smoked American barbeque-style food and gourmet burgers using local produce at the heart of everything we do. We have an excellent reputation for hosting Taster Evenings every month on our restaurant floor, as well as private functions and corporate team days.

Key responsibilities include:

  • Working closely with the Executive chef & Head chef and able to run the kitchen in his/her absence
  • Experience in menu development & costings
  • Plan and take part in monthly taster nights
  • GP, wastage control & H&S monitoring
  • Producing new dishes and menu ideas
  • Maintaining a good working relationship with FOH team and developing junior members in the kitchen

The successful candidate will be competent working with fresh meats and produce. Have a passion for BBQ style food and have some experience working with smokers.

Experience: 2-3 Years

Chef de Partie

Salary: £10 per hour

Part-time, Permanent

Job description

We are currently seeking a Chef de Partie to join our team in Three Wise Monkeys Colchester.

The right candidates will ideally have experience working in a fresh produce kitchen, work well under pressure, be very consistent and possess excellent communication skills. A passion and enthusiasm for BBQ foods would be a bonus.

Key responsibilities:

  • Preparing, cooking and presenting dishes.
  • Helping the sous chef and head chef to develop new dishes and menus.
  • Training junior staff members.
  • Ensuring you and your team have high standards of food hygiene.
  • Adhere to Health, Hygiene & Safety Act regulations.
  • Monitoring portion and waste control to maintain profit margins.
  • Liaising with suppliers.
  • Checking deliveries for quality

Must be available to work weekends and evenings.
